A BIT OF HISTORY

The origins


It all began around 1850 when great-great-grandfather Onorato Pollo started his bakery business. His son Camillo then added the production of biscuits and other leavened products.

The 1930s


In the 1930s, the visionary grandson Onorato decided to learn the art of pastry-making in prestigious patisseries in Milan. Together with his wife Maria, he began preparing delicious pastries, celebration cakes, and what would become the crowning glory of our patisserie: Zabaione. His sons Giuseppe and Camillo, called to work at a young age due to their father's premature passing, continued the family business under the wise guidance of their mother.

Today


The recipes of pastry chefs Onorato and Giuseppe are preserved in a family manuscript, passed down to their son Alberto, who today, with experience and innovation, has aimed to maintain the flavours of the ancient patisserie by using the historic wood-fired oven in the workshop.
